Do those ESC's handle 6-cell? You may have overloaded the BEC on the ESC that powers the RX.

I think the 30A would have been too small for that scooter motor anyway, that 250W is continuous - they ...

Yeah moving the center of gravity with some extra steel is a nice reliable low tech option if it'll fit in the design.

I don't think that servo would work, 35kg/cm of torque would only give you 3.5 ...
