How about you buy a cheap bunnings wheel with the bearings mounted in them (the 100mm semi-puematic ones) and just pull the hubs apart and use them for holding your bearings.

Depends on how thick the material is that you are mounting your bearings
into but I have mounted bearings into 10mm ally plate using a pair of trapping plates one each side pinned straight through seems to work but we now tend to use oilite bushes instead of bearings ,because if the bearings get hit hard they collapse wereas bushes will just missform allowing you to finish the fight
